Cooking with Kristy: Kristy's Surprise!

This super-easy and inexpensive meal is perfect for busy people or those living on their own, as the leftovers can be frozen!

Ingredients
  • 1 cup of uncooked basmati rice
  • 6-8 sausages, cut into thirds
  • 1 onion
  • 2 cloves of garlic, crushed
  • 400g tin of tomatoes
  • 1/2 cup mushrooms, sliced
  • 1 carrot, diced
  • 1 celery stick, diced
  • Vegetable stock
  • 1/2 dozen Spanish stuffed olives
  • Oil
Method

Sweat down onions with garlic and add in rice. Stir until uncooked rice is covered in oil and add vegetable stock until rice is covered. Once the rice has absorbed all of the stock, add 1/2 cup more stock and add in sausages, carrot, celery and stir. Once carrot and celery have softened and the sausages are mostly cooked, add the tomatoes, mushrooms and olives. Stir and simmer for 15-20 minutes until sausages are cooked.

Serves 4
